Chorizo Pasta

Prep Time: 5 mins Cook Time: 15 mins Servings: 2

Ingredients:

tin of chopped tomatoes
4 cloves of garlic
1 ball of mozzarella
diced chorizo
spaghetti
parmesan
1tbsp oregano
1tbsp chili flakes

Directions:

Fry the chorizo in olive oil until the fat is rendered and it’s crispy then set to the side
Cook the tomatoes and garlic in the chorizo oil
Blend the sauce with the mozzarella then stick it back in the pan
Add salt, pepper and chili flakes and loosen with some pasta water
Add cooked pasta and chorizo, mix and serve

Notes

Banger dish, serves 2 portions.

Yaki Udon

Prep Time: 5 mins Cook Time: 10 mins Servings: 3

Ingredients:

Udon noodles
Beef/Pork strips
Half an onion
A few spring onions
40ml cup dark soy sauce
30ml oyster sauce
25g brown sugar
1 tablespoon mirin
1 teaspoon sesame oil
½ teaspoon rice wine vinegar

Directions:

Slice the onion and spring onions
Combine all liquids and sugar for sauce
Start boiling the udon, remove and strain after 3 mins
Start frying meat and onion for a few minutes, and then add the sauce
Add noodles and mix

Notes

This was nice but the sauce was a bit too rich/strong. Maybe recommend reducing the amount or using light soy sauce instead of dark.

I’ve started taking my SSBM practise a little bit more seriously. After some disappointment of not being on the Scottish PR and poor tournaments results in 2025, I want to take a push this year to see how far I can go. For now I’m focused on playing more high level opponents, analysing my gameplay more often and watching higher level falcos.
I’d quite like to give another fighting game a shot. I don’t think anything will replace SSBM for me but it would be cool to have another game and community to be involved with. The two I’m considering are GGACR and MBAACC. I’ll maybe enter a tournament for each of them and see how I feel!

The start of this year has been slow, I’ve mostly been working on this website and a small Golang project to help with slippi replay exporting. Other slp2mp4 style tools exist but I just want some experience with Golang and to have a tool I can tailor to my own needs.

Hello! My name is Dylan Clark and I’m currently a Senior DevOps Engineer from Scotland. I work at Smarter Grid Solutions with an incredible team of people to help customers manage their DER (distributed energy resources). I’m part of the DevOps team, where I focus on automating and optimizing our infrastructure and deployments.

Before joining the DevOps team, I worked as a Software Engineer at Smarter Grid Solutions. I was involved in the development of Java Springboot micro-services, as we transitioned our flagship product from a monolithic architecture to a microservices architecture.
