Ingredients:
- tin of chopped tomatoes
- 4 cloves of garlic
- 1 ball of mozzarella
- diced chorizo
- spaghetti
- parmesan
- 1tbsp oregano
- 1tbsp chili flakes
Directions:
- Fry the chorizo in olive oil until the fat is rendered and it’s crispy then set to the side
- Cook the tomatoes and garlic in the chorizo oil
- Blend the sauce with the mozzarella then stick it back in the pan
- Add salt, pepper and chili flakes and loosen with some pasta water
- Add cooked pasta and chorizo, mix and serve
