Chorizo Pasta

Prep Time: 5 mins Cook Time: 15 mins Servings: 2 Ingredients: tin of chopped tomatoes 4 cloves of garlic 1 ball of mozzarella diced chorizo spaghetti parmesan 1tbsp oregano 1tbsp chili flakes Directions: Fry the chorizo in olive oil until the fat is rendered and it’s crispy then set to the side Cook the tomatoes and garlic in the chorizo oil Blend the sauce with the mozzarella then stick it back in the pan Add salt, pepper and chili flakes and loosen with some pasta water Add cooked pasta and chorizo, mix and serve Notes Banger dish, serves 2 portions.

Yaki Udon

Prep Time: 5 mins Cook Time: 10 mins Servings: 3 Ingredients: Udon noodles Beef/Pork strips Half an onion A few spring onions 40ml cup dark soy sauce 30ml oyster sauce 25g brown sugar 1 tablespoon mirin 1 teaspoon sesame oil ½ teaspoon rice wine vinegar Directions: Slice the onion and spring onions Combine all liquids and sugar for sauce Start boiling the udon, remove and strain after 3 mins Start frying meat and onion for a few minutes, and then add the sauce Add noodles and mix Notes This was nice but the sauce was a bit too rich/strong. Maybe recommend reducing the amount or using light soy sauce instead of dark. ...
