Chorizo Pasta
Prep Time: 5 mins Cook Time: 15 mins Servings: 2 Ingredients: tin of chopped tomatoes 4 cloves of garlic 1 ball of mozzarella diced chorizo spaghetti parmesan 1tbsp oregano 1tbsp chili flakes Directions: Fry the chorizo in olive oil until the fat is rendered and it’s crispy then set to the side Cook the tomatoes and garlic in the chorizo oil Blend the sauce with the mozzarella then stick it back in the pan Add salt, pepper and chili flakes and loosen with some pasta water Add cooked pasta and chorizo, mix and serve Notes Banger dish, serves 2 portions.
